WINNY KURCZAK
- lyzka oliwy razem z odrobina masla (maslo dodaje smaku, jesli krotko smazymy mieso)
- 3-4 piersi z kurczaka pokrojone na kostke okolo 3-4 cm
- 3-4 duze pieczarki drobno pokrojone
- 5 zabkow czosnku podzielonych na pol
- okolo 3 cebul pokrojonych na cieniutkie piorka
- okolo pol litra bialego wina
- lisc laurowy
- 2 lyzki lekkiej smietany
- 300ml bulionu warzywnego lub z kurczaka
- 4-5 galazek swiezego estragonu + pare listkow do udekorowania
- sol
- pieprz
Na patelni przysmazamy leciutko kurczaka,zeby nie byl brazowy!
Odkladamy na bok,mozna obsuszyc z tluszczu na papierze absorbcyjnym.
Nastepnie do rondla dodajemy troszke oliwy z maslem,dodajemy cebulke,
gotujemy pod przykryciem, az bedzie miekka i przezroczysta,
dodajemy kurczaka i pieczarki,zalewamy winem,
czekamy, az wino odparuje, dolewamy bulionu,dodajemy czosnek,estragon.
i gotujemy okolo 20-30 minut ,
Doprawiamy.
Jak kurczak bedzie mieciutki i sos zmniejszy sie o przynajmniej polowe,
mieszamy w kubeczku smietane razem z dwoma lub trzema lyzkami sosu.
Smietana sie wtedy nie zwazy.
Dodajemy do kurczaka i dokladnie mieszamy.
Mozna podawac z mlodymi ziemniaczkami, lub purèe ziemniaczanym
ja lubie najlepiej z ryzem dlugoziarnistym.
